About this wine

Vineyard and terroir

Created by the third generation of the Dal Bianco family from organically cultivated vineyards. The vines are farmed in accordance with natural growth cycles, without chemical fertilisers or practices intended to force high yields.

Vinification

Harvesting is manual into crates from late August to early September. Grapes undergo two selections, first on the vine and then at the winery. Gravity guides the production process. White vinification off the skins takes place at a controlled temperature of 15–18°C, followed by secondary fermentation and maturation on selected yeasts for approximately 60 days in pressure tanks at 13–14°C.

Ageing

The wine rests for approximately one month before distribution.

Technical data

Organic Conegliano Valdobbiadene Prosecco Superiore DOCG Brut. Alcohol: 11.5%. Residual sugar: 9 g/L. Bottle pressure: 5.0 atm. Available in a 0.75 L format.

Tasting profile

Straw yellow with bright greenish highlights. The perlage is fine and creamy on the palate. The classical bouquet combines white spring flowers and ripe white-fleshed fruit with balsamic and mint nuances. Sleek, flavourful and approachable, the palate balances acidity and softness before a persistent aromatic finish.

Serving and pairing

Serve at 6–8°C.
