Vineyard and terroir
The grapes come from 20-year-old vines.
Vinification
The grapes are harvested by hand from the end of August, then pressed and vinified in French oak barrels at 22–28 °C.
Ageing
The wine ages for nine years in 112-litre French oak barriques.
Serving and pairing
Pair with aged cheeses and less-sweet desserts.
