About this wine
Vineyard and terroir
Salento in southern Puglia has a hot, dry and arid climate. The vineyards use the high-density “settonce” training system, which maximises sunlight and provides good air circulation, promoting even ripening and reducing the risk of vine disease. Sites and exposures were selected to suit the native variety.
Vinification
The grapes are harvested by hand in the first week of October, sorted on a conveyor belt, destemmed and pressed. Fermentation takes place under temperature control at 27–31 °C to preserve the fruit character. The wine then undergoes malolactic fermentation in French oak barrels.
Ageing
The wine ages for 12 months in 225-litre French oak barrels.
Label / history
The Askos project showcases ancient Apulian grape varieties at risk of disappearing. Its name comes from the Greek word “askos”, meaning “decanter”, and refers to the winemaking tradition established in the region by the ancient Greeks, reflected in artifacts found across Puglia, including remains of wine vessels. The settonce training system is represented by an ancient hexagonal coin with a hole at its centre.
