About this wine
Vineyard and terroir
The grapes grow on Salento’s red limestone soils. The vines are 30 years old on average.
Vinification
The grapes are harvested at optimal ripeness and destemmed, then macerated for 48 hours at a controlled temperature of 4–5 °C. Alcoholic fermentation takes place on the skins in temperature-controlled steel tanks. The wine is gently pressed from the pomace before undergoing malolactic fermentation.
Ageing
The wine ages in oak barrels for six months, followed by at least three months in bottle in the winery’s cellars.
