About this wine
Vineyard and terroir
The fruit comes from the highest part of the Santo Stefano del Sole estate, at 600 m above sea level. The vineyard faces south-west and has deep, well-drained sandy-loam soil rich in mineral elements. The 25-year-old vines are planted at 4,000 vines per hectare and trained on vertical trellises with Guyot pruning. Yields are approximately 60 quintals per hectare before drying and 15 quintals per hectare afterward.
Grapes
100% Fiano.
Vinification
From November, the vineyard’s climatic conditions encourage the natural development of noble rot, Botrytis cinerea, on the berries. Drying continues for more than two months, concentrating the fruit before a manual December harvest. White vinification takes place in stainless-steel tanks for approximately 30 days at a controlled 19–20°C.
Ageing
Approximately 12 months in wood, followed by approximately 48 months in bottle.
Tasting profile
Deep straw yellow with golden reflections. The concentrated bouquet recalls white truffle, dates, dried figs, other dried fruit, apricot preserve, candied citrus, hazelnut, caramel, honey and exotic fruit. Delicately sweet and highly intense, the palate remains balanced and fresh, with dried-fruit, preserve and balsamic notes.
Serving and pairing
Serve at 15–16°C. Pair with delicate sauces based on cheese and dried fruit, creamy or mature cheeses, and desserts made with fruit or pastry cream. It can also be enjoyed as a meditation wine. Ageing potential is 20 years or more.
