About this wine

Vineyard and terroir

Parabuio comes from the Casi subzone, where the vineyard occupies a difficult natural setting between two hills beside the vigorous, water-rich Parabuio stream. The site lies at 400–440 metres and faces south-east. Its galestro-rich soil promotes gas exchange between soil and air, supporting Merlot ripening at elevation and giving the fruit balance and aptitude for ageing. The vineyard was planted in 1998 at 5,000 vines per hectare, is trained to spurred cordon and yields 45 quintals of grapes per hectare.

100% Merlot.

Vinification

The grapes are picked by hand into crates with careful cluster selection. Destemming and crushing are deliberately gentle. During alcoholic fermentation, pump-overs are light and repeated.

Ageing

After racking, the wine spends a period in concrete before ageing for 24 months in a combination of new and second-use barriques.

Tasting profile

Blackcurrant, morello cherry, vanilla, butter and cream lead the aromas, gradually opening toward spices and grilled nuances. The palate is full, powerful and supple; marked freshness cleanses the mouth and extends the finish.

Serving and pairing

Serve at 18–20 °C. Pair with red meat and medium-aged cheeses; poultry is also included in the technical-sheet recommendations.
