About this wine
Vineyard and terroir
The Pinot Nero grows on an east-facing hillside in Serralunga d’Alba. The soils consist of white clay alternating with layers of calcareous sand. Planting density is 4,300 vines per hectare.
Grapes
100% Pinot Nero.
Vinification
The grapes are gathered in small crates holding approximately 20 kg and taken immediately to the cellar. Whole bunches are placed directly in the presses for gentle pressing, producing about 50% free-run must. The must enters temperature-controlled tanks and settles for 24 hours; coarse solids collect at the bottom and the clear portion is separated by racking. Fermentation then proceeds in stainless-steel tanks for about 20 days at 18–20°C.
Ageing
The base wine remains on its lees until the following spring. In May it undergoes a second fermentation in bottle, followed by 36 months of maturation on the lees in a cool, dark environment in keeping with the Metodo Classico tradition.

Alcohol: 12.5% vol. Available format: 0.75 L.
Tasting profile
Straw yellow with pale golden reflections and a fine, persistent perlage. Aromas recall white-fleshed fruit, dried fruit and bread crust. Pinot Nero supplies immediate structure, balanced by the creamy mousse. The finish is long, fresh and distinctly savoury.

Serve at 6–8°C.
