About this wine
Vineyard and terroir
Il Pareto comes from a dedicated vineyard at the historic Tenuta di Nozzole in Greve in Chianti. The site lies between 330 and 370 m above sea level and has loamy-clay soils with little skeletal material. The vines are trained to a low spur-pruned cordon and planted at 3,000–5,000 vines per hectare. For 2019, average production was 5.5 tonnes of grapes per hectare, with a 60% grape-to-wine yield.
Grapes
100% Cabernet Sauvignon.
Vinification
The current production profile calls for fermentation in stainless steel and approximately four weeks of maceration.
Ageing
Maturation lasts at least 30 months in barriques before further ageing in bottle.
Technical data
Alcohol: 14.5%. Ageing potential: up to 30 years. First vintage: 1987. The wine is made only in the best years.
Tasting profile
Deep, crystalline purple-red in colour. The aromatic profile is intense and enveloping, combining red fruit, pomegranate, Marasca cherry and dried plum with incense, bay leaf and black pepper. The palate is completely dry, deep, full-bodied and savory, followed by a spicy tertiary-aroma aftertaste. It already shows substantial complexity in its youth.
Serving and pairing
Suitable for rich, savory dishes, elaborate first courses, red meats and aged cheeses.
Vintage notes
The 2019 winter was broadly regular in both temperature and rainfall, although budbreak occurred about one week ahead of the local historical average. Spring—especially May—was rainy and slightly cooler than usual. June and July were dry and warm without extreme heat. August rain and dry, windy conditions in September and October supported full ripening, good sugar levels and excellent polyphenolic concentration.
Label / history
Created during the 1980s as a Supertuscan project, Il Pareto explores the aptitude of the Nozzole terroir for Cabernet Sauvignon rather than an indigenous variety. Its limited crop retains the variety’s identity while gaining additional structure, body, elegance and sensory complexity from the site.
