Vineyard and terroir
The grapes are grown in Piedmont.
Vinification
After gentle pressing, the must settles to separate the solids. An initial traditional fermentation is followed by a second fermentation in sealed tanks at a controlled 18–19 °C, which creates the wine’s natural sparkle. Fermentation is then stopped to preserve its aromatic character.
Tasting profile
Delicate and aromatic, with floral, citrus and fruit notes. Lively acidity gives the wine a light, balanced palate with a smooth, silky texture.
Serving and pairing
Pairs particularly well with fruit-based desserts, including cheesecake, panna cotta and sorbet.
