Vineyard and terroir
The fruit grows on a plot in Santa Cristina a Mezzana.
Grapes
Sangiovese with a small proportion of Cabernet Franc.
Vinification
The grapes are harvested by hand and pressed. The must is macerated on the skins to bring out more aroma and flavour. Fermentation with natural yeasts lasts 18–20 days.
Ageing
The wine matures for 10 months in small French oak barrels, followed by a further 6 months in bottle.
