About this wine
Vineyard and terroir
The grapes come from the Dispensa and Gurra vineyards in Menfi, in the province of Agrigento. The sites lie at 70–75 m above sea level. Dispensa has moderately calcareous soil of average depth, tending toward chalk and with almost no structure. Gurra is moderately deep, highly chalky, low in limestone and without structure.
The vineyards are planted at 4,545 vines per hectare and trained on espalier systems, using both spur-pruned cordon and Guyot pruning. Yields are 90 q/ha for Nero d’Avola and 80 q/ha for Syrah.
Cultivation follows organic-farming principles and the SOStain protocol. Beans, vetch and spontaneous plants provide ground cover, increasing organic matter and nitrogen while supporting soil microfauna. Vine health is maintained with minimal quantities of sulphur and copper. Beneficial insects, mating disruption, zeolite, kaolin and plant extracts are used to control pests.
Grapes
The latest published vintage, 2025, is composed of 40% Nero d’Avola, 40% Syrah and 20% other varieties. Sauvignon Blanc forms a small part of the supplementary varieties.
Vinification
The 2025 harvest took place from 9 to 26 August. The grapes are placed in small trolleys and chilled to approximately 15–16°C. At the winery they are destemmed and transferred to the press, where a short maceration of about one hour extracts the desired pale colour.
The must is held at approximately 8–9°C for 36 hours of static settling. The clarified portion is then racked and fermented at approximately 14–16°C for 8–10 days in 210 or 264 hl stainless-steel tanks. The wine is racked after about five days and again at the end of fermentation, then lightly macro-oxygenated. It remains on the finest lees with weekly stirring to help stabilize anthocyanins, preserve aromas and add palate volume. The components are subsequently blended and bottled.
Ageing
Maturation takes place in stainless steel. The 2025 wine was bottled in December 2025.

Tasting profile
Pearl pink in colour, recalling the inner layer of an oyster shell. The 2025 shade is slightly deeper than in recent years. The aromatic profile combines petit fours and red fruit—currants and pomegranate—with deeper notes of plum and pineapple, followed by green tea, rosehip and wild apple. The palate is very smooth, with a restrained touch of acidity and an easy-drinking, refreshing finish.
Serving and pairing
Designed to be enjoyed young for maximum freshness. It can be served as an aperitif with toasted almonds, high-quality potato chips, Nocellara del Belice olives or Sicilian street food, and also pairs with fried fish and seafood.
Vintage notes
The 2025 Menfi harvest was good overall and particularly successful in the higher vineyards of Ulmo, Monte Cirami and Maroccoli. Cooler soils, nearby woodland and Mediterranean scrub encouraged complete, balanced ripening and a favourable relationship between quality and quantity. Sauvignon Blanc performed especially well and a smaller portion was selected for this Rosé.
Label / history
First produced in 2007. The redesigned label places the wine’s name and an arrangement of Damask roses at its centre. These ancient flowers, sometimes called “painters’ roses,” are associated with intense fragrance; the motif connects the label with the wine’s floral character and Sicilian identity.
