About this wine
Vineyard and terroir
The fruit comes from the “Vigneto dell’Onda” vineyard, planted at 290–300 m above sea level. The vines are 9–10 years old.
Vinification
The grapes are harvested before 10 a.m. and kept overnight in a cool underground fruttaio also used to dry grapes for “Vin Santo.” They are pressed the following morning with the stems attached. Spontaneous fermentation takes 30–35 days at a controlled temperature of 12–15 °C.
Ageing
The wine rests on its fine lees in stainless-steel tanks for three months, with frequent bâtonnage. It is bottled during the full moon in late January or early February.
Tasting profile
Its pale colour recalls wheat in sunlight. Fresh, crisp orchard-fruit notes mingle with wildflowers and herbs, giving the palate a lively, easygoing character.
