About this wine
Vineyard and terroir
The fruit comes from two vineyards in the Chianti Colli Senesi area, "Vigneto del Mezzogiorno" and "Vigneto della Mattina". They lie at 335–365 m above sea level, with south-west and south-east exposures. The vines are 10 to 20 years old. The soil is a mix of sand (79%), clay (15%) and light loam (6%). Planting density is 5,000 vines per hectare, and yields do not exceed 45 hl per hectare.
Vinification
The grapes are harvested by hand into 10 kg plastic crates and then hand-selected on a sorting table. Maceration lasts 12 days at a controlled temperature of around 25 °C, with frequent pumping over. The wine is then gently pressed.
Ageing
The wine ages for 12 months in small 5 hl oak barrels, followed by 6 months in stainless steel tanks. It is bottled during the waning moon in June and July, then matures a further 12 months in bottle.
