About this wine
Vineyard and terroir
The vines grow in deep, loose soils of clay and sand of volcanic origin. They average 45–50 years of age and are farmed biodynamically.
Vinification
The grapes are harvested by hand, with 30% left undestemmed. After pressing, they ferment spontaneously for six weeks in conical vats and oval oak barrels, without temperature control. The wine is made naturally and bottled by hand without clarification or filtration.
Ageing
The wine first ages for 12 months in oval and conical barrels, then for 10 months in cement tanks and old oval oak barrels.
