About this wine
Vineyard and terroir
The vines grow in Alto Adige in loose clay and sandy soils of volcanic and moraine origin. They average 15 years of age and are farmed biodynamically.
Vinification
The grapes are harvested by hand, with 30% of the fruit left on the stems. After pressing, spontaneous fermentation takes place in conical oak vats for four weeks without temperature control.
Ageing
The wine ages for 25 months: 90% in conical vats and 10% in small oak barrels. It is bottled by hand without fining or filtration.
