About this wine
Vineyard and terroir
The fruit is grown in Oslavia, Friuli-Venezia Giulia, close to the Slovenian border. The estate’s 12 hectares of vineyards have clay soils containing fragments of mountain rock. The low-growing vines are densely planted at 6,500–10,000 vines per hectare. The vineyards are farmed organically without chemical fertilisers or pesticides and with minimal intervention.
Grapes
Pinot Grigio is known as Sivi in Slovenia.
Vinification
The fully ripe grapes are harvested by hand and placed in oak barrels. Fermentation takes place on the skins for eight days without temperature control, followed by malolactic fermentation. No sulphur is added, and the wine is neither fined nor filtered.
Ageing
The wine matures for 18 months in large oak barrels.
Serving and pairing
Allow the wine to breathe for 15–30 minutes before serving.
Label / history
The production approach revives methods used in the region before the 1930s.
