About this wine
Vineyard and terroir
The Sauvignon Blanc grows in vineyards at the foot of a hill in Cormons. The soils there have a high proportion of silt, which retains moisture well.
Vinification
The grapes are harvested at optimal ripeness and macerated at low temperature for 12–18 hours. Fermentation takes place at 19 °C with cultured yeast. Malolactic fermentation is prevented.
Ageing
The wine ages for 12 months in 25-hectolitre oak barrels. It is bottled in the autumn of the year following the harvest.
