About this wine
Vineyard and terroir
The vines grow in the estate's certified organic vineyards, on terraces in the hills of Friuli at around 150 metres above sea level.
Vinification
The grapes are harvested by hand, fairly late, and only healthy, ripe fruit is selected. They macerate on the skins in 15-hectolitre oak vats shaped as truncated cones. Temperature is not controlled, and the cap is punched down regularly. The juice is then gently pressed off the skins.
Ageing
The wine rests on its fine lees for 11 months in 25-hectolitre Slavonian oak casks, then ages a further 15 months in the same casks. It is bottled in September, during the waning moon in keeping with the lunar calendar, without fining or filtration. Natural sediment in the bottle reflects the wine's natural character and helps it keep for longer.
