About this wine

Vineyard and terroir

The fruit comes from selected vineyards in Salento. The vines grow in limestone and clay soils and are trained using the traditional alberello pugliese method. Fruit is selected carefully during harvest.

Vinification

Thirty per cent of the grapes are partially dried on the vine. The fruit is harvested by hand in late September, then crushed, macerated and fermented at a controlled temperature. The young wine is gently pressed and separated from the pomace.

Ageing

The wine ages in barriques for at least 12 months.

Tasting profile

Elegant, supple and richly flavoured.
