Produced in Piedmont from Barbera grapes.
Grapes
100% Barbera.
Vinification
The grapes are harvested manually and dried using the traditional Appassimento method. Over-ripening and drying concentrate their colour, aromas and extract before fermentation. Fermentation and skin maceration include daily pumping over.
Ageing
The wine receives a final refinement before release.
Technical data
A light residual sweetness is present, although no analytical value is given.
Tasting profile
Rich and opulent, with aromas of ripe fruit and sour-cherry preserve. Fine, velvety and silky tannins surround a persistent aftertaste, while the slight residual sweetness reinforces the rounded texture.
Serving and pairing
Pair with grilled meat, lamb and mature cheese. Cellaring potential is 7 years.
