Vineyard and terroir
The production area is Piedmont.
Grapes
Cortese and Chardonnay.
Vinification
The grapes are harvested manually with selective picking, then softly pressed and filtered. Fermentation takes place at controlled temperature. Secondary fermentation is carried out with selected yeasts in pressurized tanks using the Martinotti, or Charmat, method.
Tasting profile
A dry sparkling wine with a brilliant white colour and fine, persistent perlage. The nose offers delicate aromas of hay and flowers.
Serving and pairing
Suitable as an aperitif, with dessert or on its own at any time. Cellar life is 2–3 years.
