Vineyard and terroir
The fruit is grown in Veneto in northern Italy.
Vinification
The grapes are harvested by hand at optimal ripeness. Whole bunches are gently pressed, and the must ferments in stainless-steel tanks with natural yeasts. The wine is lightly filtered before bottling.
Ageing
The wine rests on its fine lees for approximately 4–5 months.
Serving and pairing
Pair with roast chicken and seasonal vegetables, anchovies toasted in butter and served with bread, or a classic Caesar salad with an anchovy-rich dressing.
