About this wine
Vineyard and terroir
The grapes come from the winery's vineyards in Veneto. Fruit is selected from the sunniest, most open sites, and the Begnoni family works with the region's finest grape growers.
Vinification
After harvest the grapes are pressed at the winery and macerated on the skins for 10 days. Three days into fermentation, pomace from Amarone and Recioto production is added to the must. This starts a second fermentation by the ripasso method.
Ageing
The wine ages for 9 months in large 50 hl oak barrels, then a further 6 months in bottle in the winery's cellars before release.

Label / history
Santa Sofia has been tied to the history, culture and landscape of its region for two hundred years. The winery is housed in a XVI-century villa designed by Andrea Palladio, which is the symbol of the estate. The Begnoni family has owned the cellars since 1960. Giancarlo Begnoni runs the estate with his son Luciano and daughter Patrizia.
For the estate's other wines, grapes for Recioto, Montegradella and Amarone are dried for 120 days, losing 30% of their water. The whites are fermented in steel tanks, and the reds mature in oak barrels in centuries-old vaulted cellars.
