About this wine
Grapes
A Ligurian clone of Vermentino, given in the source as Pegato, is used.
Vinification
The grapes are picked by hand. Spontaneous fermentation with native yeasts takes place in old wooden barrels. The wine undergoes maceration and remains on its fine lees for eight months.
Ageing
Ageing in oak barrels contributes texture and structure. Several further months in bottle bring balance and elegance.
Tasting profile
The nose combines white flowers, fruit and honey with subtle spice. The palate has distinct saline minerality, a creamy texture, depth and structure. The wine is vibrant, clean, complex and elegant.
