About this wine
Vineyard and terroir
The vineyards are situated on south- and southeast-facing hills in Menfi, on Sicily’s southern coast, at elevations of 150–350 m. The soils are silty and sandy, with scattered white pebbles. The warm Mediterranean climate allows the grapes to ripen slowly and evenly.
Vinification
The grapes are usually harvested in the second week of September. They undergo cryomaceration at 5–8 °C for 4–6 hours, followed by fermentation at a controlled temperature of 16–18 °C for 15–20 days.
Ageing
The wine matures in steel tanks for four months.
Tasting profile
Fresh and elegant, with fruity aromas and a soft, savoury palate marked by expressive mineral notes.
