About this wine
Vineyard and terroir
The fruit comes from Settesoli’s own vineyards in Sicily’s Belice Valley, where the soils are dark, mineral-rich clay. The grapes partially dry on the vine under the hot Mediterranean sun, concentrating the resulting wine.
Vinification
The grapes are destemmed, crushed and gently pressed. Fermentation takes place in temperature-controlled stainless-steel tanks.
Ageing
The wine remains in stainless-steel tanks for around eight months.
Tasting profile
Noticeably concentrated.
Serving and pairing
Pairs particularly well with red-meat dishes and aged cheeses.
