Vineyard and terroir
Sicily has a Mediterranean climate, with abundant sunshine, moderate rainfall and coastal breezes that reduce temperature fluctuations and ventilate the vineyards, helping the grapes ripen while limiting rot and mould. The description states that viticulture is organic, without chemicals or herbicides. The island’s volcanic slopes and Mount Etna have formed dark soils rich in mineral deposits.
Vinification
The grapes are harvested by hand in the final weeks of August. They are chilled and pressed, after which the separated juice is vinified in stainless-steel tanks for three months.
