About this wine
Vinification
The grapes are harvested at full ripeness in late September, at dawn while temperatures are at their lowest. After two rounds of sorting, they are destemmed and placed in new barriques for temperature-controlled fermentation. The grapes are then gently pressed at 4 °C, and fermentation is completed in stainless-steel tanks at 18 °C.
Ageing
The wine remains on its lees for six months, followed by further ageing in bottle for an unspecified period.
Tasting profile
Fresh, with the characteristic bouquet of Vermentino from Bolgheri. The palate has well-balanced acidity and a pleasant flavour, with a complex yet harmonious structure.
Serving and pairing
Pairs with white meats, mozzarella, shellfish and fried fish.
