About this wine
Vineyard and terroir
The Carrubo estate lies in Manduria, in the countryside near Fragagnano (Taranto). Its 40 ha of vineyards are situated at around 120 m above sea level and planted with traditional local varieties. The limestone soil, hot summers and marked difference between daytime and nighttime temperatures favour Primitivo.
Vinification
The grapes are harvested overripe and gently crushed, then macerated on the skins for 8–10 days. Alcoholic and malolactic fermentation follow.
Ageing
The wine ages for 18 months in stainless steel tanks, followed by 18 months in bottle.
