About this wine
Vineyard and terroir
The vineyards face southeast and are planted on clay-limestone soils. The regional climate helps the Pecorino ripen well, giving especially refined wines with good minerality.
Vinification
The grapes are harvested by hand during the middle ten days of September. In the winery they undergo a brief cold maceration, then ferment in stainless steel tanks at 13–16 °C for 20 days.
Ageing
The wine rests on fine lees in cement tanks for 2 months. It is then bottled and matured for a further 2 months in the winery's cellars.
