About this wine
Vineyard and terroir
The fruit comes from estate vineyards in Duino, Aurizina, Loc. Prepotto and Trieste on the Carso plateau. The vines are 6–30 years old and grow at 260–280 metres above sea level with south-eastern exposure. The red soils have a high proportion of karst limestone. Planting density is 8,000–10,000 vines per hectare.
Vinification
The grapes are harvested by hand from the last week of September through the first ten days of October, placed in small containers and transported to the winery in them. The wine is made using red-wine techniques: after destemming and crushing, fermentation takes place on the skins for 20 days in open vats. Natural yeasts are used, with no temperature control, and the skins are punched down daily. The wine is neither stabilized nor filtered before bottling.
Ageing
The wine matures for four years in 10-hectolitre Slavonian oak barrels, followed by a further year in the estate’s cellars before release.
Tasting profile
The 2006 is intense yet elegant.
Label / history
The wine is produced only in selected vintage years. The 2006 vintage was released in June 2011 in a run of 1,300 individually numbered bottles. The “V” on the label is both the first letter of Vitovska and a representation of the number five, which the label concept associates with harmony and the union of centre and balance.
