Vineyard and terroir
The grapes grow in vineyards on limestone soils containing clay and sand. The Dolomite mountain range shelters the sites from the wind.
Vinification
The grapes are harvested at optimum ripeness, then destemmed and pressed. The wine undergoes the Charmat method: secondary fermentation takes place in sealed pressure tanks, where the bubbles develop. The grapes’ natural sugar is fully fermented during production.
Serving and pairing
Suitable as an aperitif and with fish, seafood, shellfish and Asian dishes.
