Vineyard and terroir
The Cor parcel lies within the Römigberg Estate, northwest of Lake Caldaro, at 250–330 metres above sea level. Its extremely steep slopes face south-southeast and receive intense sunshine under warm, Mediterranean climatic influences. Loamy morainic deposits overlie rocky, gravelly dolomitic limestone.
Cows and oxen graze among the vines and olive trees as part of the estate’s closed-farm approach.
Grapes
Cabernet Sauvignon. The Cor parcel was planted with Cabernet Sauvignon and Petit Verdot in 1986; “Cor” is Latin for “heart.”
Vinification
Spontaneous fermentation on the skins takes place in stainless-steel tanks and wooden casks, with a portion of whole bunches.
Ageing
The wine matures for several months in small and large wooden casks, followed by approximately one year in bottle.
Technical data
The 2020 vintage has 12% alcohol by volume.
Tasting profile
Cherry red with ruby highlights. The concentrated nose centres on cherry and blackcurrant. Full-bodied yet elegant, with present tannins, spice and freshness.
Serving and pairing
Recommended with grilled or fried red meat, lamb, venison and cheese. Optimal drinking maturity is 5–20 years.
Label / history
The Cor parcel takes its name from the Latin word for “heart.” It was planted in 1986 on Römigberg’s steep lakeside slope.
