Vineyard and terroir
The fruit comes from selected old vineyards at 100–300 metres in the Alpone Valley, around Monteforte d'Alpone in eastern Soave. These southeast-facing sites are planted on marl and limestone. Growers substantially restrict yields to improve fruit quality. Vines average 20–30 years old and are trained using Pergola Veronese and Guyot systems.
Grapes
100% Pinot Grigio.
Vinification
The grapes were harvested by hand and gently pressed in a pneumatic press. The juice was cooled immediately to protect its fresh-fruit aromas. Fermentation proceeded without skin contact in 1,200-hectolitre stainless-steel tanks at a controlled 18°C.
Ageing
The 2023 wine matured in 1,200-hectolitre stainless-steel tanks before bottling. The wine page also refers to concrete as part of the ageing regime.
Technical data
ABV is 12.5%, acidity 5.3 g/L, pH 3.4 and residual sugar 5 g/L. The 75 cl bottle is closed with a screwcap. Suitable for vegetarian and vegan consumers.
Tasting profile
Ripe peach and pear aromas are accented by hints of flint. The palate is rich and well balanced, ending with a refreshing finish.
Vintage notes
Rain during the 2023 season hydrated the vines before a very hot summer. Cool nights helped the fruit retain freshness and develop natural residual sugar.
