Vineyard and terroir

The vineyards are situated at 100–400 m on south and south-east-facing hills in the Valpantena Valley outside Verona. Cool breezes from the Dolomite foothills moderate the climate, allowing slow ripening while helping the fruit retain aroma and acidity. Poor, chalky soils limit vine vigour. The vines average 20–30 years of age and are trained to both Pergola Veronese and Guyot.

Grapes

80% Corvina and 20% Rondinella/Corvinone.

Vinification

The wine follows a modern interpretation of the traditional Veronese ripasso technique. In the traditional method, young wine was refermented in March on skins left after Amarone fermentation. Here, the young wine is instead fermented with dried grapes in January following the vintage, building additional body and depth.

Ageing

Aged for 12 months in oak before bottling.

Technical data

ABV: 13.5%. Residual sugar: 6 g/L. Acidity: 5.6 g/L. pH: 3.4. Bottled in 75 cl under natural cork. Suitable for vegetarians and vegans.

Tasting profile

Ruby red, with a concentrated bouquet of red fruit and dried cherries. The full-bodied palate balances an opulent cherry-pie character with a supple structure. The long finish carries a mouthwatering bitter-cherry note.

Vintage notes

Cool conditions and a pronounced temperature drop in April delayed budburst in 2021. Heavy rain in mid-September was followed by a brief heatwave, with temperatures reaching 34–35°C and diurnal variations of about 15°C. At harvest the grapes showed excellent ripeness, crunchy berry flavours and elevated sugar concentration following the late heat.
