Vineyard and terroir
The fruit comes from hillside vineyards near Vicenza. Cooler nights help the grapes develop their aromatic compounds. The vines are Guyot-trained on calcareous soils of volcanic origin.
Grapes
100% Glera.
Vinification
The grapes are picked by hand, destemmed and crushed. Following gentle pressing, the must ferments in temperature-controlled stainless-steel tanks until it reaches 10% ABV. The wine then passes to pressurised autoclaves, where the addition of yeast and sugar initiates a second fermentation. The resulting carbon dioxide dissolves into the wine.
After filtration and centrifugation, the wine is chilled and bottled under pressure to retain the dissolved carbon dioxide. Bottle pressure exceeds 3 bar, placing it in the fully sparkling, or spumante, category.
Technical data
ABV: 11.5%. Residual sugar: 15.4 g/L. Acidity: 6 g/L. pH: 3.24. Closed with natural cork and available in 20 cl, 75 cl and 150 cl bottles. Suitable for vegetarians and vegans; identified as sustainably produced.
Tasting profile
Light straw yellow with fine bubbles. Pear and white-flower aromas lead into a bright, clean palate and a refreshing finish.
