Vineyard and terroir
The vineyards lie at 100–400 m in the Valpantena Valley hills outside Verona, with south and south-east exposures. Cool air descending from the Dolomite foothills moderates the climate, supports gradual ripening and helps preserve aroma and acidity. Poor, chalky soils restrain vine vigour. The vines average 20–30 years of age and are trained to both Pergola Veronese and Guyot.
Grapes
70% Corvina, 20% Merlot and 10% Rondinella.
Vinification
The grapes were harvested by hand, destemmed and crushed, then macerated on their skins for 12–24 hours. The must was chilled, pressed in a pneumatic press and fermented at 18–20°C in 1,200 hl stainless-steel tanks, a temperature range intended to retain Corvina's delicate cherry character. The wine remained in temperature-controlled 1,200 hl stainless-steel tanks until bottling to preserve freshness.
