Vineyard and terroir
The grapes grow at 200 m above sea level on sunny, breezy hills around Asolo, a landscape of vineyards and olive groves. The soils are marl and clay, rich in minerals and organic matter.
Vinification
The grapes are harvested by hand into small crates during the final week of September, transported directly to the winery in a small steel truck and processed while fresh. Vinification takes place under pressure in an anaerobic environment in temperature-controlled stainless-steel tanks. The base wine undergoes the Martinotti–Charmat process for 40 days. Residual sugar is approximately 14 g/L.
