Vineyard and terroir

The wine comes from the historic land of Montepulciano.

Vinification

After harvest the grapes are destemmed and gently pressed. The must goes to stainless steel tanks for fermentation at a controlled temperature of no more than 25 °C, which helps preserve and enhance the aromatic qualities of the grapes.

Ageing

The 2024 vintage was aged for around 4 months in steel tanks, where malolactic fermentation also took place. It was bottled in July 2025.

Tasting profile

Combines the typical freshness of traditional Tuscan Sangiovese with the generous fruit character of Merlot.

Label / history

The name refers to Sabatino Lulli, known as "Sabazio", a monk from the abbey in Montepulciano who in the Middle Ages was the first to provide guidelines for winemaking in the area.
