Vineyard and terroir
The wine comes from Puglia, where the climate is mild and Mediterranean and the sun is warm.
Vinification
The grapes are harvested by hand a few days after ripening. Fermentation lasts 30–45 days in large wooden vats at a carefully controlled temperature.
Ageing
The wine spends 24 months in French oak barrels, then a further 12 months in bottle. The barrels add complexity and refined woody notes, and the bottle time makes the flavour more harmonious and balanced. It can be kept for more than 10 years and continues to develop in the bottle.
Tasting profile
Rich and juicy. The aroma is bold, with ripe red and black fruit alongside coffee, black pepper and clove. The palate is full and well balanced, with oak from the barrel ageing, earthy nuances, gentle acidity and soft tannins. The finish is long, with lingering fruit notes.
Serving and pairing
It suits roasted meat, savory pies and cheese. The producer recommends large, deep, bowl-shaped glasses so the wine can breathe fully. Gently warming the glass in the hands helps release the aromas.
