Vineyard and terroir
The vineyards lie in a mild Mediterranean climate influenced by the nearby sea and abundant sunshine. The soils are stony and limestone-rich.
Vinification
The grapes are harvested by hand at full ripeness. Picking is delayed to increase their sugar concentration and give the wine a more expressive structure. Traditional vinification takes place in large Slavonian oak casks for 30–45 days.
Ageing
The wine ages for 12 months in cherry-wood barriques, followed by six months in large casks and six months in bottle.
Serving and pairing
Allow the wine to breathe for about an hour before serving.
