Vineyard and terroir
The grapes grow on hillsides at 200–300 m above sea level. The vines average 15 years of age and are planted at a density of 5,000 vines per hectare.
Vinification
The grapes are harvested by hand into small crates, with only the healthiest, highest-quality bunches selected. Fermentation takes place in stainless-steel tanks at a controlled temperature.
Ageing
The wine rests on its fine lees for nine months.
