Vineyard and terroir
This hillside wine comes exclusively from Prepotto in the Province of Udine. The vines grow in the Ronco area at 160 m above sea level with a south-eastern exposure. Clay-rich ponca and the hillside position contribute depth, aromatic character and persistence. The vines are Guyot-trained, with yields of 5,000–7,000 kg/ha.
Grapes
100% Schioppettino di Prepotto, an indigenous red variety also known as Ribolla Nera.
Vinification
The grapes are harvested manually into crates from late September through early October, then destemmed and crushed. Maceration lasts 8–10 days with daily délestage. Malolactic fermentation is completed. After alcoholic fermentation, the wine remains in stainless steel throughout autumn.
Ageing
Maturation continues for approximately 12 months in barriques that have already seen several cycles, followed by several months in bottle.
Tasting profile
Ruby red tending toward violet. The characteristic bouquet combines woodland berries, raspberry and pepper. The palate is intense and pleasantly sharp.
Serving and pairing
Serve at 16–18°C, preferably in a Bordeaux-style balloon glass. Pair with roasts and aged cheeses.
