Vineyard and terroir
The fruit comes from an organic vineyard at 280–310 m above sea level. The vines are 12–60 years old and grow in marl soils containing ancient clay and abundant limestone. Cool summer nights, moderate rainfall, the warming influence of coastal Maremma and protection from nearby Mount Amiata create conditions for slow, even ripening; the soils retain moisture well.
Vinification
The grapes are harvested by hand in late September. Cold maceration precedes three weeks of fermentation on the skins in stainless-steel tanks, using natural yeasts at a controlled 20–25 °C. Malolactic fermentation occurs naturally.
Ageing
The wine matures for 36 months in 600 L Slavonian oak casks, followed by two years in bottle. The 2015 vintage was expected to reach peak maturity between 2023 and 2040.
