Vineyard and terroir
The fruit comes from the estate’s oldest vines, which are 65 years old, and is harvested only in the best vintages. The Suolo vineyard lies at 280–310 metres above sea level on marl-dominated soils with a high limestone content. Organic practices and minimal intervention are used in the vineyard and cellar.
Vinification
For the 2019 vintage, the grapes were harvested by hand during the first two weeks of October. Four days of pre-fermentation cold maceration were followed by three weeks of fermentation and maceration in cement vats. Malolactic fermentation took place in concrete tanks.
Ageing
The wine spent 12 months in 12 hL egg-shaped French oak casks, followed by 12 months in Slavonian oak casks. It was bottled in April and May during the most favourable phase of the Moon.
