Vineyard and terroir
The grapes grow in the countryside around Siurgus Donigala, at an altitude of 220 m. The mixed soils comprise limestone, medium-textured clay tending towards looseness, and small to medium-sized pebbles. The Mediterranean climate is marked by mild winters, limited rainfall, heat and wind.
Vinification
The grapes are harvested by hand early in the morning. A two-day cold maceration is followed by three to four days of settling. Alcoholic fermentation then takes place in stainless-steel tanks at a controlled temperature of 23–24 °C for three to four weeks. The wine also undergoes malolactic fermentation.
Ageing
Part of the wine matures in 225 L French barriques for eight to ten months, while the remainder ages in concrete tanks for five months. After bottling, it rests in storage for approximately one further month.
Tasting profile
Rich, aromatic and layered, with good texture and a distinctive character.
