The fruit comes from the estate’s vineyards in Orvieto.
Vinification
The grapes are harvested at optimal ripeness, usually in September. They are gently pressed and fermented in stainless-steel tanks at a controlled temperature of 18 °C.
Ageing
The wine rests on its fine lees for two months before bottling.
