Vineyard and terroir
The grapes grow in Batasiolo’s vineyards in Piedmont.
Vinification
The grapes are harvested by hand during the first half of September, destemmed, gently pressed and cold-macerated. The must is chilled to 0 °C. The wine is made by the Charmat-Martinotti method; the source specifies a second fermentation in bottle. Slow fermentation in an autoclave is stopped at the target alcohol level, after which the wine is bottled under pressure. Its pink hue is obtained by adding red wine to white Moscato.
Ageing
The wine is intended to be enjoyed young, while its aromas and flavours remain fresh.
