Vineyard and terroir
The grapes grow in the Upper Esino Valley in Matelica, at 350–450 m above sea level. The first vines were planted in 1986.
Vinification
The harvest date is determined by sugar levels, total acidity and pH. After gentle vacuum pressing, the must is settled at low temperature, then fermented in 300 hl stainless-steel tanks at a controlled 14–15 °C for 10 days. The wine is made sparkling by the Italian Charmat method: the base wine undergoes a second fermentation with sugar and yeast in sealed autoclaves over at least six months.
Ageing
Before the second fermentation, the wine matures in stainless-steel tanks for two months.
