Vineyard and terroir
The fruit comes from the southern slopes of the Bellaria area, near the medieval village of Castelnuovo dell'Abate, at 350 metres above sea level. The vines receive plenty of sunshine and grow in soils of crumbly limestone mixed with ancient sandstone, which give the grapes minerality and structure. Vineyard work is careful and yields are low, which concentrates the flavours.
Grapes
The variety is Sangiovese Grosso (Brunello).
Vinification
The grapes are harvested by hand, so that only fully ripe bunches are selected. Maceration is gentle. Fermentation lasts 15–18 days at a carefully controlled temperature.
Ageing
The wine ages for 24 to 36 months in oak casks of 30–40 hl, which bring roundness, complexity and softer tannins. A further 6–9 months in bottle follows before release.
